Sumatran coffee is noted for its earthy qualities, which we have enhanced by dark roasting the bean, lending it a muted, spicy acidity that deepens as it cools. What was at first grassy expands into a colossal taste, waist high in meadow weeds, with apple wood and sorrel showing through.
